Ingredients

  • 1.5 Pounds (lb) lean beef, ground
  • 1 Medium onion, minced
  • 1 Medium green bell pepper, minced
  • 1 Tablespoon (tbsp) garlic powder
  • 1 Tablespoon (tbsp) cumin, ground
  • 1 Pound (lb) processed cheese food, cubed
  • 1 4 Ounces (oz) can green chiles, diced
  • 1 Cup tomato sauce
  • 0.75 Head iceberg lettuce, shredded
  • 2 Whole tomatoes, minced
  • 1 16 Ounces (oz) package corn chips

Steps

  1. In a large, deep skillet, combine the ground beef, minced onion, minced bell pepper, garlic powder, and ground cumin. Cook over medium-high heat until the beef is evenly browned. Drain any excess fat.
  2. Stir in the cubed cheese, diced green chiles, and tomato sauce into the beef mixture. Cook for about 5 minutes, or until the cheese is fully melted.
  3. Divide the shredded lettuce equally among salad plates. Pour the hot meat and cheese mixture over the lettuce.
  4. Garnish each plate with minced tomatoes and a handful of corn chips. Serve immediately.
