  • 1 Cup unsalted butter, softened
  • 0.75 Cup brown sugar, packed
  • 0.25 Cup white sugar
  • 1 3.4 Ounces (oz) package instant pistachio pudding mix
  • 2 Whole eggs
  • 1 Teaspoon (tsp) vanilla extract
  • 12 Ounces (oz) semisweet chocolate chips
  • 0.5 Cup maraschino cherries, minced
  • 0.25 Cup pistachios, minced

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Sift the flour and baking soda together; set aside.
  3. In a large bowl, beat the butter, brown sugar, and white sugar together until smooth.
  4. Stir in the pistachio pudding mix until well combined.
  5. Beat in the eggs, one at a time, then stir in the vanilla extract.
  6. Gradually stir in the flour mixture until just combined.
  7. Fold in the chocolate chips, cherries, and pistachios.
  8. Drop large spoonfuls of dough onto ungreased baking sheets.
  9. Bake in the preheated oven until the cookies are light brown, about 10 minutes.
