- Beat the softened butter in a mixing bowl with an electric mixer until creamy. Gradually add the white sugar and brown sugar, beating well. Incorporate the eggs and vanilla extract into the mixture.
- In a separate bowl, combine the flour, cocoa powder, and baking soda. Gradually add this dry mixture to the butter mixture, beating well. Stir in 0.5 cup of the divided walnuts. Cover the dough and chill for at least 2 hours.
- Preheat the oven to 375°F (190°C). Grease two baking sheets.
- Mix the remaining 0.5 cup of walnuts with 1 tablespoon of sugar. Divide the chilled dough into 4 parts, keeping the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate-covered caramel candy, then roll into a ball. Dip the tops into the walnut-sugar mixture and place them 2 inches apart on the prepared baking sheets with the nuts facing up.
