  • 1 Cup butter, melted
  • 0.5 Cup brown sugar, packed
  • 1 Teaspoon (tsp) vanilla extract
  • 3 Cups quick cooking oats
  • 1 Cup semisweet chocolate chips, melted
  • 0.5 Cup peanut butter

Steps

  1. Grease a 9-inch square pan.
  2. Melt the butter in a large saucepan over medium heat. Stir in the brown sugar and vanilla extract, then mix in the oats. Cook over low heat until the ingredients are well blended, about 2 to 3 minutes.
  3. Press half of the oat mixture into the bottom of the prepared pan. Reserve the remaining oat mixture for topping.

  5. Crumble the remaining oat mixture over the chocolate layer, pressing down gently. Cover and refrigerate for 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.
