Ingredients

  • 2 10 Inch (in) flour tortillas
  • 2 Tablespoons (tbsp) vegetable oil
  • 1 Small onion, minced
  • 0.5 Red bell pepper, minced
  • 1 Teaspoon (tsp) garlic, minced
  • 1 Teaspoon (tsp) jalapeño peppers, minced
  • 15 Ounces (oz) black beans, drained
  • 3 Ounces (oz) cream cheese, cubed
  • 0.5 Teaspoon (tsp) salt
  • 2 Tablespoons (tbsp) fresh cilantro, minced

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Wrap the tortillas in foil.
  2. Bake the wrapped tortillas in the preheated oven until heated through, about 15 minutes.
  3. Meanwhile, heat the vegetable oil in a 10-inch skillet over medium heat. Add the minced onion, minced red bell pepper, minced garlic, and minced jalapeño peppers. Cook and stir for 2 minutes.
  4. Stir in the drained black beans and cook until heated through, about 3 minutes.
  5. Add the cubed cream cheese and salt to the skillet. Cook, stirring occasionally, for 2 minutes until the cream cheese is melted and well combined. Stir in the minced fresh cilantro.
  6. Spoon the filling in a line across the middle of each tortilla. Fold the opposing edges of the tortilla to overlap the filling, then roll one of the opposing edges around the filling to create a burrito.
  7. Serve immediately and enjoy your creamy black bean burritos!
