Ingredients

  • Cooking spray
  • 3 Cups graham cracker crumbs
  • 0.75 Cups unsalted butter, melted
  • 0.5 Cups granulated sugar
  • 0.75 Teaspoons (tsp) cinnamon, ground
  • 0.5 Teaspoons (tsp) kosher salt
  • 3 8 Ounces (oz) cream cheese, softened
  • 0.75 Cups sour cream, softened
  • 0.75 Cups granulated sugar
  • 0.25 Teaspoons (tsp) kosher salt
  • 3 Large eggs
  • 0.25 Cups heavy cream
  • 1 Teaspoon (tsp) vanilla extract
  • 0.75 Cups apple butter

Steps

  1. Gather all ingredients and preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with aluminum foil, leaving a 2-inch overhang on the long sides. Lightly coat the pan and foil with cooking spray.
  2. In a large bowl, stir together graham cracker crumbs, melted butter, sugar, cinnamon, and salt until combined and evenly moistened. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake in the preheated oven until lightly golden and fragrant, about 7 to 10 minutes. Let cool slightly for about 15 minutes. Reduce oven temperature to 300°F (150°C).
  4. In a stand mixer fitted with the paddle attachment, beat cream cheese and sour cream on medium speed until fluffy and fully combined, about 3 to 4 minutes. Add sugar and salt, beating until combined, about 1 minute.
  5. Add eggs one at a time, beating on low speed just until combined after each addition. Scrape down the sides of the bowl as needed. Add heavy cream and vanilla extract, beating on low speed just until combined.
  6. Pour the cheesecake filling into the cooled graham cracker crust. Evenly dollop apple butter over the filling. Use a butter knife or small spatula to swirl the apple butter into the filling using zig-zag motions.
  7. Place the baking pan inside a large roasting pan and place in the preheated oven. Pour boiling water into the roasting pan so it reaches halfway up the sides of the baking pan. Bake until the cheesecake slightly jiggles when shaken but is set around the edges, about 35 to 40 minutes.
  8. Turn off the oven and leave the door cracked open 7 to 8 inches. Let the cheesecake cool in the oven for 30 minutes. Remove from the water bath and let cool at room temperature for another 30 minutes. Cover and refrigerate until completely chilled, at least 4 hours or overnight.
  9. Using the foil overhang as handles, lift the cheesecake out of the pan and place it onto a cutting board. Cut into 12 rectangles and serve chilled.

Enjoy these comforting and delicious cheesecake bars with your loved ones!
