- 1 Whole apple, divided
- 1 Whole orange, divided
- 1 Whole lemon, divided
- 1 Whole lime, divided
- 1 Whole onion, divided
- 3 Cups (cup) red wine
- 3 Cups (cup) water
- Cooking spray, packaged
- 0.5 Cups (cup) ketchup
- 0.25 Cups (cup) soy sauce
- 0.25 Cups (cup) lime juice
Steps
- Prepare the Rub: In a bowl, combine kosher salt, brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper, and celery seed. Mix well and set aside.
- Prepare the Ribs: Trim excess fat from the ribs and remove the membrane from the rib side. Cut the ribs into 3- to 4-bone portions.
- Apply the Rub: Generously rub the spice mixture onto both sides of the rib portions. Place the ribs in a resealable plastic bag and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
- Prepare the Smoker: Fill the water pan of your smoker with apple, orange, lemon, lime, onion, red wine, and water. If a water pan is unavailable, use a metal bowl placed on the drip tray above the heat source.
- Smoke the Ribs: Preheat the smoker to 225-250°F (110-120°C). Smoke the ribs using soaked hickory and apple wood chips for 4 to 6 hours, or until the meat is tender and pulls easily from the bone. Change wood chips as needed.
- Prepare the Barbecue Sauce: In a bowl, mix together ketchup, soy sauce, and lime juice. Set aside.
- Grill the Ribs: Preheat an outdoor grill to medium-low heat and lightly oil the grate. Once the ribs are smoked, brush them with the prepared barbecue sauce. Grill the ribs over indirect heat, brushing occasionally with the sauce, until the sauce becomes sticky and caramelized, about 15 to 20 minutes.
