Ingredients

  • 2 Pounds (lb) russet potatoes
  • 1 Cup mayonnaise
  • 4 Teaspoons (tsp) sweet pickle relish
  • 4 Teaspoons (tsp) white sugar
  • 2 Teaspoons (tsp) white onion, minced
  • 2 Teaspoons (tsp) prepared mustard
  • 1 Teaspoon (tsp) white wine vinegar
  • 1 Tablespoon (tbsp) celery, minced
  • 1 Teaspoon (tsp) pimento, minced
  • 0.5 Teaspoon (tsp) carrot, shredded
  • 0.25 Teaspoon (tsp) dried parsley
  • 0.25 Teaspoon (tsp) black pepper, ground
  • 1 Pinch salt, to taste

Steps

  1. Peel and cube the russet potatoes. Place them in a large pot and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine mayonnaise, sweet pickle relish, white sugar, minced onion, prepared mustard, and white wine vinegar. Mix well.
  3. Add the cooled potatoes to the dressing mixture. Gently fold in the minced celery, pimento, shredded carrot, dried parsley, and ground black pepper. Season with salt to taste.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
