- 1 Teaspoon (tsp) cumin seed
- 1 Medium onion, minced
- 0.25 Cups tomato paste
- 0.25 Cups water
- 1 Pound (lb) skinless, boneless chicken breast halves, cubed
- 7 Ounces (oz) coconut milk
- 0.5 Teaspoon (tsp) brown sugar
- 0.5 Teaspoon (tsp) hot chile paste
- 1 Pinch cayenne pepper
- 0.75 Teaspoon (tsp) ground turmeric
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 0.5 Cups cilantro, minced
Steps
- Heat the vegetable oil in a large skillet over medium heat. Add cumin seeds and fry until fragrant and popping.
- Stir in the minced onion and cook until softened and translucent, about 3 to 4 minutes.
- Mix the tomato paste with water and pour into the skillet. Add the cubed chicken and cook until firm and white, about 5 minutes.
