Ingredients

  • Crust:
  • 0.5 Cup unsalted butter, melted
  • 3 Tablespoons (tbsp) white sugar
  • 1 Teaspoon (tsp) almond extract
  • 0.5 Teaspoon (tsp) salt
  • 1 Cup all-purpose flour
  • Cranberry Layer:
  • 6 Ounces (oz) fresh cranberries
  • 0.25 Cup white sugar
  • 2 Tablespoons (tbsp) water
  • 1.5 Tablespoons (tbsp) lemon zest, zested
  • Lemon Layer:
  • 2 Large eggs
  • 0.75 Cup white sugar
  • 0.33 Cup freshly-squeezed lemon juice
  • 0.33 Cup all-purpose flour
  • 1 Tablespoon (tbsp) lemon zest, zested
  • 1 Pinch confectioners sugar, to taste

Steps

  1. Preheat the oven to 350°F (180°C). Grease an 8x8-inch pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, stir together melted butter, 3 tablespoons sugar, almond extract, and salt. Add flour and mix until well incorporated. Press the dough into the prepared pan in an even layer.
  3. Bake in the preheated oven until the edges start to turn light brown, about 15 to 20 minutes. Remove from the oven and set aside.
  4. In a small saucepan, combine cranberries, 0.25 cup sugar, water, and 1.5 tablespoons lemon zest. Cook over medium heat, stirring often. Once cranberries start to pop, mash them with the back of a spoon until smooth, about 9 to 12 minutes. Set aside.
  5. In a bowl, whisk together eggs, 0.75 cup sugar, lemon juice, flour, and 1 tablespoon lemon zest until well combined.
  6. To assemble, spread the cranberry mixture evenly over the crust, then pour the lemon layer mixture over the cranberry layer.
  7. Return to the oven and bake until the filling is set, about 20 to 25 minutes.
  8. Cool completely in the pan, then run a knife around the edges. Cut into squares and dust with confectioners sugar before serving. Store leftovers in an airtight container.

Enjoy these refreshing and zesty Cranberry Citrus Bliss Bars with your loved ones!
