Ingredients

  • 0.5 Cups chopped walnuts, toasted
  • 0.25 Cups cranberries
  • 0.25 Cups balsamic vinegar
  • 1 Cups red onion, minced
  • 1 Tablespoon (tbsp) white sugar
  • 1 Tablespoon (tbsp) Dijon-style prepared mustard
  • 1 Cup vegetable oil
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 10 Cups mixed salad greens, rinsed
  • 2 Whole Red Delicious apples, sliced

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Spread the walnuts out on a baking sheet in a single layer. Bake for 8 to 10 minutes, or until lightly toasted.
  2. In a food processor, combine the cranberries, balsamic vinegar, red onion, white sugar, and Dijon mustard. Puree until smooth. Gradually add the vegetable oil while processing, and season with salt and pepper to taste.
  3. In a large salad bowl, toss together the mixed salad greens and sliced apples. Add enough of the cranberry vinaigrette to coat the salad evenly.
  4. Sprinkle the toasted walnuts over the salad and serve immediately. Enjoy the refreshing blend of flavors and textures!
