Ingredients

  • 6 Slices bacon, crumbled
  • 0.33 Cups apple cider vinegar
  • 0.75 Cups white sugar
  • 0.5 Medium red onion, minced
  • 0.5 Teaspoons dry mustard powder
  • 0.25 Teaspoons salt
  • 0.5 Cups vegetable oil
  • 1 Teaspoon poppy seeds
  • 10 Cups romaine lettuce leaves, torn
  • 1 10 Ounces can mandarin orange segments, drained
  • 0.25 Cups slivered almonds, toasted

Steps

  1. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  2. In a blender, combine vinegar, sugar, red onion, mustard powder, and salt. Cover and puree on high until smooth.
  3. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  4. To serve, toss the romaine in a large bowl with the crumbled bacon, mandarin oranges, and enough dressing to moisten.
  5. Place onto salad plates and sprinkle with toasted almonds.
