- 2 - Tablespoons (tbsp) lemon juice
- 6 - Tablespoons (tbsp) soy sauce, divided
- 1 - Cup cornstarch
- 2 - Tablespoons (tbsp) dry bread crumbs
- 2 - Medium shallots, minced, divided
- 0.5 - Bunch green onions, sliced
- 1 - Bottle (sufficient quantity for pan-frying) vegetable oil, for pan-frying
- 0.25 - Cup champagne vinegar
- 2 - Tablespoons (tbsp) white sugar
- 1 - Teaspoon (tsp) chili oil
- 1 - 10 Ounces (oz) package mixed salad greens
- 0.5 - Large cucumber, minced
- 1 - Medium tomato, minced
Steps
- Toss the tofu with lemon juice and 2 tablespoons of soy sauce in a small bowl, and set aside to marinate.
- In a separate bowl, combine the cornstarch, bread crumbs, 1 minced shallot, and half of the green onions. Toss the marinated tofu with this mixture to coat generously, reserving the remaining marinade.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Fry the tofu cubes on all sides until golden brown, then remove and drain on a paper towel.
- Whisk together the reserved marinade with champagne vinegar, 4 tablespoons of soy sauce, sugar, and chili oil; set aside.
- In a large bowl, toss together the mixed salad greens, cucumber, tomato, tofu cubes, and remaining shallot. Add the dressing and toss to combine.
