- 1 Cup uncooked brown rice
- 1.5 Cups water
- 1 15 Ounces (oz) can kidney beans, rinsed and drained
- 0.25 Cups red onion, minced
- 0.25 Cups fresh mushrooms, sliced
- 0.25 Cups bite-size broccoli florets
- 0.25 Cups green bell pepper, minced
- 0.25 Cups red bell pepper, minced
- 0.25 Cups yellow bell pepper, minced
- 2 Tablespoons (tbsp) raw almonds, chopped
- 1 Pinch coarse black pepper, to taste
- 2 Tablespoons (tbsp) fat-free Italian-style dressing
- 1 Tablespoon (tbsp) extra-virgin olive oil
Steps
- Combine the brown rice and water in a small saucepan. Bring to a boil over high heat. Cover, reduce the heat to medium-low, and simmer until the rice is tender and the liquid is absorbed, about 45 to 50 minutes. Remove from heat and allow to cool.
- In a large bowl, combine the cooled rice, kidney beans, red onion, mushrooms, broccoli, green bell pepper, red bell pepper, yellow bell pepper, and almonds. Season with black pepper.
- Toss the salad with Italian dressing and olive oil until well mixed.
