Ingredients

  • 1 3 Ounces (oz) package beef ramen noodles
  • 2 Cups boiling water
  • 3 Tablespoons (tbsp) olive oil
  • 3 Tablespoons (tbsp) apple cider vinegar
  • 3 Tablespoons (tbsp) granular no-calorie sucralose sweetener
  • 1 16 Ounces (oz) bag coleslaw mix
  • 6 Whole green onions, minced
  • 0.5 Cups sunflower seeds

Steps

  1. Place the ramen noodles in a colander and break them into quarters. Pour boiling water over the noodles to soften them slightly. Use a fork to separate the noodles, then rinse quickly with cold water and drain.
  2. In a bowl, whisk together the flavor packet from the ramen noodles, olive oil, vinegar, and sweetener to make the dressing.
  3. In a large bowl, combine the softened ramen noodles, coleslaw mix, minced green onions, and sunflower seeds. Toss to mix well.
  4. Drizzle the dressing over the coleslaw mixture and continue to toss until the entire mixture is evenly coated with the dressing.
