Ingredients

  • 1 Pound (lb) turkey breast, ground
  • 1 Whole head iceberg lettuce, torn
  • 6 Whole green onions, minced
  • 15 Ounces (oz) can kidney beans, drained
  • 2 Cups Cheddar cheese, shredded
  • 0.5 Cups dill pickles, diced
  • 0.5 Cups black olives, sliced
  • 2 Cups mayonnaise, fat-free
  • 1 Teaspoon (tsp) lemon juice
  • 1 Teaspoon (tsp) white wine vinegar
  • 0.75 Cups taco sauce
  • 14.5 Ounces (oz) package tortilla chips, baked, low-fat

Steps

  1. Place the turkey in a large deep skillet, season with garlic salt, and cook over medium-high heat until fully cooked. Crumble and set aside to cool.
  2. In a large bowl, mix together the cooked turkey, lettuce, green onions, kidney beans, cheese, pickles, and olives.
  3. In a separate bowl, whisk together the mayonnaise, lemon juice, vinegar, and taco sauce to create the dressing.
  4. Pour the dressing over the salad mixture and refrigerate for at least 30 minutes.
  5. Before serving, mix in 2 cups of broken tortilla chips. Garnish with whole chips and serve. Enjoy your zesty and crunchy taco salad!
