Ingredients

  • 3 Large carrots, sliced
  • 4 Whole eggs
  • 1 Cup cooking oil
  • 2 Cups white sugar
  • 2 Cups all-purpose flour
  • 1 Tablespoon (tbsp) baking powder
  • 2 Tablespoons (tbsp) butter
  • 1 Cup white sugar
  • 1 Cup instant hot chocolate mix
  • 0.75 Cup milk

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
  2. In a blender or food processor, combine the carrots, eggs, and oil. Process until the carrots are finely chopped.
  3. Transfer the carrot mixture to a mixing bowl. Stir in 2 cups of sugar until well blended.
  4. Add the flour and baking powder to the mixture, stirring until well combined. Pour the batter into the prepared baking dish.
  5. Bake in the preheated oven for about 40 minutes, or until the top springs back when lightly touched.
  6. While the cake is baking, prepare the icing. In a pan, combine the butter, 1 cup of sugar, instant hot chocolate mix, and milk.
  7. Heat the mixture over medium-high heat, stirring continuously until it thickens and is almost boiling.
  8. Once the cake is done, remove it from the oven and immediately spread the icing evenly over the top.
