Ingredients

  • 1 Tablespoon (tbsp) olive oil
  • 0.25 Teaspoon (tsp) garlic, minced
  • 0.5 Medium onion, minced
  • 2 Large carrots, peeled
  • 1 Stalk celery, minced
  • 4 Medium potatoes, cubed
  • 0.25 Teaspoon (tsp) chili powder
  • 0.25 Teaspoon (tsp) paprika
  • 0.5 Teaspoon (tsp) salt
  • 0.25 Teaspoon (tsp) pepper
  • 1 Medium yellow squash, cubed
  • 2 Cups fresh spinach, torn
  • 0.33 Cups frozen corn kernels
  • 1 16 Ounces (oz) can pinto beans, drained
  • 1 Cup spaghetti squash, shredded
  • 2 Cups vegetable broth
  • 5 Cups water
  • 3 4 Ounces (oz) cans green chile peppers, minced

Steps

  1. Heat olive oil in a large pot over medium-high heat. Add garlic, onion, carrots, celery, potatoes, chili powder, paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown, about 10 minutes.
  2. Add yellow squash, spinach, corn, pinto beans, and spaghetti squash to the pot. Stir until spinach leaves have wilted, 1 to 2 minutes.
  3. Pour vegetable broth, water, and green chiles into the mixture. If necessary, add more water to ensure vegetables are covered.
  4. Bring stew to a boil, then reduce heat to medium-low. Cover and simmer until the vegetables are tender, about 45 minutes.
