Ingredients

  • 2 Skinless, boneless chicken breast halves
  • 1.27 Ounces (oz) packet dry fajita seasoning, divided
  • 1 Tablespoon (tbsp) vegetable oil
  • 1 15 Ounces (oz) can black beans, drained
  • 1 11 Ounces (oz) can Mexican-style corn
  • 0.5 Cups salsa
  • 1 10 Ounces (oz) package mixed salad greens, packaged
  • 1 Medium onion, minced
  • 1 Medium tomato, sliced

Steps

  1. Rub the chicken evenly with half of the fajita seasoning.
  2. Heat the vegetable oil in a skillet over medium heat. Cook the chicken for 8 minutes on each side, or until the juices run clear. Set aside.
  3. In a large saucepan, mix the black beans, Mexican-style corn, salsa, and the remaining fajita seasoning. Heat over medium heat until warm.
  4. Prepare the salad by tossing the mixed salad greens, minced onion, and sliced tomato together.
  5. Top the salad with the cooked chicken and dress with the warm bean and corn mixture.
