Ingredients

  • 1 Tablespoon vegetable oil
  • 1 Medium onion, minced
  • 1 Clove garlic, minced
  • 4 Whole tomatoes, diced
  • 2 Cups cooked roast beef, shredded
  • 1 8 Ounces jar taco sauce, prepared
  • 1 4 Ounces can green chile peppers, diced
  • 0.5 Teaspoons cumin
  • 1 Pinch red pepper flakes, to taste
  • 6 7 Inch flour tortillas, warmed
  • 1.5 Cups Cheddar cheese, shredded
  • 2 Cups lettuce, shredded

Steps

  1. Heat the vegetable oil in a skillet over medium-high heat. Add the minced onion and garlic, cooking until tender and transparent, about 5 minutes.
  2. Stir in the diced tomatoes, shredded roast beef, taco sauce, diced green chile peppers, and cumin. Add red pepper flakes to taste if desired. Bring the mixture to a boil.
  3. Reduce the heat to medium and simmer the mixture uncovered for 25 minutes, or until it thickens.
  4. Lay the warmed flour tortillas on a clean, flat surface. Spread approximately 2/3 cup of the beef mixture in the center of each tortilla.
  5. Evenly sprinkle the shredded Cheddar cheese and shredded lettuce over the beef mixture.
  6. Fold over the ends and sides of each tortilla to form a burrito package. Serve immediately and enjoy!
