Serving Size: 6

Cooking Time: 380 minutes

Ingredients

  • 4 Cloves garlic, peeled
  • 1 Large onion, divided
  • 2 Tablespoons (tbsp) fresh oregano, minced
  • 1 Tablespoon (tbsp) ground cumin, ground
  • 2 Teaspoons (tsp) ground ancho chile pepper
  • 2 Teaspoons (tsp) kosher salt
  • 2 Teaspoons (tsp) ground black pepper
  • 1 Tablespoon (tbsp) white wine vinegar
  • 1 Tablespoon (tbsp) olive oil
  • 3 Pounds (lb) boneless pork loin roast
  • 1 Whole lime, divided

Steps

  1. In a blender, combine the garlic, onion, oregano, cumin, ancho chile pepper, salt, and black pepper. Add the white wine vinegar and enough olive oil to create a paste. Blend until smooth, scraping down the sides as needed to ensure all ingredients are fully incorporated.
  2. Rub the spice paste generously over the entire pork loin, ensuring it is well-coated. Place the seasoned pork into a slow cooker.
  3. Set the slow cooker to Low and cook for 6 to 8 hours, or until the pork is fork-tender and easily shredded.
  4. Once cooked, remove the pork from the slow cooker and let it rest for a few minutes. Then, cut into chunks or shred the pork as desired.
  5. Serve the pork with lime wedges for an added burst of citrus flavor. Enjoy with rice, tortillas, or as part of a hearty bowl with fresh cilantro and onions.
