Cooking Time: 25 minutes

Ingredients

  • 1 Tablespoon (tbsp) canola oil
  • 2 Tablespoons (tbsp) onion, minced
  • 7 Ounces (oz) vermicelli pasta
  • 4 Cups chicken stock
  • 2 Ounces (oz) tomato-flavored bouillon cubes
  • 8 Ounces (oz) can tomato sauce
  • 0.5 Teaspoons (tsp) cumin, ground
  • 0.5 Teaspoons (tsp) oregano, dried
  • 1 Whole lime, sliced
  • 0.25 Cups cotija cheese, crumbled
  • 0.25 Cups sour cream
  • 1 Pinch fresh cilantro, torn

Steps

  1. Heat the canola oil in a large saucepan over medium-high heat. Add the minced onion and sauté for about 1 minute until fragrant and translucent.
  2. Add the vermicelli pasta to the pan and stir continuously for about 3 minutes, or until the pasta turns golden brown.
  3. Pour in the chicken stock and add the tomato-flavored bouillon cubes. Stir until the bouillon is dissolved.
  4. Add the tomato sauce, ground cumin, and dried oregano. Stir to combine all ingredients.
  5. Cover the saucepan and reduce the heat to a simmer. Cook for 10 to 11 minutes, or until the vermicelli is tender and has absorbed most of the liquid.
  6. Remove from heat and let it sit for a couple of minutes to allow the flavors to meld.
  7. Serve the vermicelli hot, garnished with crumbled cotija cheese, a dollop of sour cream, and fresh cilantro. Squeeze lime wedges over the top for a zesty finish.
  8. Enjoy your savory Mexican vermicelli as a standalone dish or as a side to your favorite Mexican entrée.
