Ingredients

  • 8 8 Inch flour tortillas
  • 2 Tablespoons (tbsp) vegetable oil
  • 1 Red onion, sliced
  • 1 Green bell pepper, sliced
  • 1 Red bell pepper, sliced
  • 1 Teaspoon (tsp) garlic, minced
  • 1 Yellow squash, sliced
  • 0.5 Cups salsa
  • 1 Teaspoon (tsp) cumin, ground
  • 0.5 Teaspoon (tsp) salt
  • 1 Cup Monterey Jack cheese, shredded
  • 0.25 Cup cilantro, chopped

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Wrap the flour tortillas in aluminum foil and place them in the oven. Bake for 15 minutes or until thoroughly heated.
  2. In a 10-inch skillet, heat the vegetable oil over medium-high heat. Add the sliced red onion, green bell pepper, red bell pepper, and minced garlic. Stir to coat the vegetables with oil.
  3. Cover the skillet, reduce the heat to medium, and cook for 5 minutes.
  4. Add the sliced yellow squash to the skillet. Stir in the salsa, ground cumin, and salt. Cover and cook for an additional 5 minutes.
  5. Spoon the vegetable mixture evenly down the centers of the warm tortillas. Sprinkle with shredded Monterey Jack cheese and chopped cilantro.
  6. Roll up the tortillas and serve immediately. Enjoy your zesty vegetable fajitas!
