- 1 Cup cold water, divided
- 2 Cups granulated sugar
- 1 Cup light corn syrup
- 0.25 Teaspoons (tsp) salt

- 0.5 Cup powdered sugar, sifted

- In a large mixing bowl, combine the gelatin with 0.5 cup of cold water. Let it sit to bloom while you prepare the syrup.
- In a saucepan, combine the remaining 0.5 cup of water, granulated sugar, corn syrup, and salt. Stir over medium heat until the sugar dissolves.
- Increase the heat to high and bring the mixture to a boil without stirring. Use a candy thermometer to cook until the syrup reaches 240°F (soft-ball stage).
- Remove the syrup from heat and carefully pour it into the gelatin mixture while mixing on low speed.
- Gradually increase the mixer speed to high and beat until the mixture is thick and fluffy, about 10-15 minutes. Add vanilla extract and mix until combined.
- Grease a 9x13 inch baking dish and dust with powdered sugar.
- Pour the marshmallow mixture into the prepared dish, using a spatula to spread it evenly.
- Dust the top with more powdered sugar and let it set at room temperature for at least 4 hours or overnight.
