  • 1 Cup cold water, divided
  • 2 Cups granulated sugar
  • 1 Cup light corn syrup
  • 0.25 Teaspoons (tsp) salt
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Cup powdered sugar, sifted

Steps

  1. In a large mixing bowl, combine the gelatin with 0.5 cup of cold water. Let it sit to bloom while you prepare the syrup.
  2. In a saucepan, combine the remaining 0.5 cup of water, granulated sugar, corn syrup, and salt. Stir over medium heat until the sugar dissolves.
  3. Increase the heat to high and bring the mixture to a boil without stirring. Use a candy thermometer to cook until the syrup reaches 240°F (soft-ball stage).
  4. Remove the syrup from heat and carefully pour it into the gelatin mixture while mixing on low speed.
  5. Gradually increase the mixer speed to high and beat until the mixture is thick and fluffy, about 10-15 minutes. Add vanilla extract and mix until combined.
  6. Grease a 9x13 inch baking dish and dust with powdered sugar.
  7. Pour the marshmallow mixture into the prepared dish, using a spatula to spread it evenly.
  8. Dust the top with more powdered sugar and let it set at room temperature for at least 4 hours or overnight.
  9. Once set, cut the marshmallows into squares and dust the sides with additional powdered sugar to prevent sticking.
