  • 1 Cup long grain rice
  • 3.75 Cups water, divided

  • 1 Teaspoon (tsp) cayenne pepper
  • 1 Cup broccoli, chopped
  • 0.5 Cups corn kernels
  • 0.5 Cups fresh green beans, sliced
  • 0.5 Whole carrot, diced
  • 0.25 Cups water
  • 0.5 Teaspoons (tsp) turmeric, ground
  • 1.5 Tablespoons (tbsp) black pepper, ground
  • 0.25 Cups roasted cashews
  • 0.25 Cups cilantro, minced

Steps

  1. Heat the corn oil in a large saucepan over medium-high heat. Add the onion, garlic, red bell pepper, and whole cloves. Sauté until the onion is softened and begins to brown, about 10 minutes.
  2. Stir in the rice and cook for 1 minute, stirring constantly to coat the rice with the oil and spices.
  3. Add 3.75 cups of water, salt, and cayenne pepper. Bring to a boil, then reduce the heat to medium-low. Cover and simmer until the rice is tender, about 20 minutes.
