Ingredients

  • 3 Tablespoons (tbsp) butter
  • 2 Cups whole corn kernels, cooked
  • 1 Whole red bell pepper, diced
  • 1 Cup zucchini, minced
  • 2 Whole green onions, minced
  • 1 Whole jalapeno pepper, minced
  • 0.5 Cups salsa
  • 2 Tablespoons (tbsp) fresh cilantro, torn
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a heavy large skillet, melt the butter over medium-high heat.
  2. Add the corn, bell pepper, zucchini, green onions, and jalapeno pepper.
  3. Sauté the vegetables until they are tender, about 6 minutes.
  4. Remove the skillet from heat and refrigerate the vegetables until chilled.
  5. Once chilled, add the salsa and fresh cilantro to the vegetable mixture.
  6. Stir well and season with salt and pepper to taste.
  7. Serve chilled or at room temperature as a side dish or light meal. Enjoy!
