Ingredients

  • 2 Quarts water
  • 2 Pounds fresh green beans, washed
  • 1 Teaspoon (tsp) salt
  • 2 Teaspoons (tsp) mustard seed
  • 2 Teaspoons (tsp) dried dill weed
  • 1 Teaspoon (tsp) red pepper flakes
  • 1 Teaspoon (tsp) dill seed
  • 4 Cloves garlic, minced
  • 2 Cups distilled white vinegar
  • 0.67 Cups white sugar
  • 2 Cups water
  • 1 Pinch salt, to taste

Steps

  1. Bring 2 quarts of water to a boil. Add the green beans and boil for 5 minutes or until the beans are just tender. Plunge the beans into cold water to set their color, then drain well.
  2. In a large bowl, combine salt, mustard seed, dill weed, red pepper flakes, dill seed, and minced garlic. Mix well. Add the cooled beans to the bowl and stir to coat.
  3. In a small saucepan, bring 2 cups of water, vinegar, sugar, and additional salt to taste to a boil. Pour this mixture over the beans and spices. Mix thoroughly.
  4. Chill the beans in an airtight container for at least overnight before eating. For best results, allow the beans to marinate in the refrigerator for a week before serving.
