Ingredients
- 2 Quarts water
- 2 Pounds fresh green beans, washed
- 1 Teaspoon (tsp) salt
- 2 Teaspoons (tsp) mustard seed
- 2 Teaspoons (tsp) dried dill weed
- 1 Teaspoon (tsp) red pepper flakes
- 1 Teaspoon (tsp) dill seed
- 4 Cloves garlic, minced
- 2 Cups distilled white vinegar
- 0.67 Cups white sugar
- 2 Cups water
- 1 Pinch salt, to taste
Steps
- Bring 2 quarts of water to a boil. Add the green beans and boil for 5 minutes or until the beans are just tender. Plunge the beans into cold water to set their color, then drain well.
- In a large bowl, combine salt, mustard seed, dill weed, red pepper flakes, dill seed, and minced garlic. Mix well. Add the cooled beans to the bowl and stir to coat.
- In a small saucepan, bring 2 cups of water, vinegar, sugar, and additional salt to taste to a boil. Pour this mixture over the beans and spices. Mix thoroughly.
- Chill the beans in an airtight container for at least overnight before eating. For best results, allow the beans to marinate in the refrigerator for a week before serving.
