  • 1 Whole ripe peach, sliced
  • 1 Pound (lb) prepared pizza dough
  • 4 Teaspoons (tsp) olive oil, divided
  • 3 Tablespoons (tbsp) pesto
  • 3 Tablespoons (tbsp) ricotta cheese
  • 4 Slices prosciutto, torn
  • 1 Whole heirloom tomato, sliced
  • 1/3 Cup quesadilla cheese, shredded
  • 1/2 Cup arugula
  • 1 Tablespoon (tbsp) hot honey

Steps

  1. Preheat a gas grill with all burners on High for 10 to 15 minutes. Grill peach slices until they begin to soften and have grill marks, about 5 minutes. Set aside.
  2. Reduce the flame on half of the grill burners to Low, creating areas of direct and indirect heat. Shape the pizza dough into a circle and brush one side with 2 teaspoons of olive oil.
  3. Carefully place the dough, oil side down, onto the grill over direct heat. Close the cover and grill until the bottom is just barely cooked and shows char marks, 1 to 3 minutes.
  4. Use tongs to turn the dough over and move it to the indirect heat. Brush with pesto, dollop with ricotta cheese, and sprinkle with quesadilla cheese. Scatter prosciutto, grilled peaches, and sliced heirloom tomato on top. Grill until the cheese is melted, about 3 minutes.
  5. Remove the pizza from the grill, top with arugula, and drizzle with hot honey and the remaining 2 teaspoons of olive oil. Cut into wedges and serve.
