- 1 Tablespoon (tbsp) olive oil
- 0.5 Cups onion, minced
- 0.5 Cups celery, minced
- 0.5 Cups carrots, minced
- 0.5 Cups green bell pepper, minced
- 1 Clove garlic, minced
- 14.5 Ounces (oz) diced tomatoes
- 1.5 Tablespoons (tbsp) chili powder
- 1 Tablespoon (tbsp) tomato paste
- 1 Tablespoon (tbsp) distilled white vinegar
- 1 Teaspoon (tsp) black pepper, ground
- 15 Ounces (oz) kidney beans, drained
- 8 Kaiser rolls
Steps
- Heat the olive oil in a large skillet over medium heat. Add the minced onion, celery, carrot, green bell pepper, and minced garlic. Sauté until the vegetables are tender.
- Stir in the diced tomatoes, chili powder, tomato paste, distilled white vinegar, and ground black pepper. Cover the skillet, reduce the heat, and let it simmer for 10 minutes.
- Add the drained kidney beans to the skillet and cook for an additional 5 minutes.
- Cut a 1/4 inch slice off the top of each kaiser roll and set aside. Hollow out the center of each roll, leaving about 1/2 inch thick shells. Reserve the inside of the rolls for other uses.
- Spoon the bean mixture evenly into the hollowed-out rolls and replace the tops. Serve immediately.
