Cooking Time: 30 minutes

Ingredients

  • 2 Tablespoons (tbsp) vegetable oil
  • 1 Cup uncooked converted white rice
  • 0.5 Cup yellow onion, minced
  • 0.5 Cup green bell pepper, minced
  • 1 Pound (lb) ground beef
  • 1 Cup canned corn, drained
  • 6 Ounces (oz) tomato sauce
  • 0.5 Cup ketchup
  • 1 Cup water
  • 1 Teaspoon (tsp) garlic powder
  • 1 Teaspoon (tsp) ground cumin
  • 0.5 Teaspoon (tsp) smoked paprika
  • 1 Pinch salt, to taste
  • 1 Pinch freshly ground black pepper, to taste
  • 2 Tablespoons (tbsp) fresh cilantro, minced (optional for garnish)

Steps

  1. In a large saucepan over medium heat, warm the vegetable oil. Add the uncooked rice, minced onion, and minced green bell pepper. Sauté for about 5 minutes, stirring frequently, until the onions are translucent and the rice is lightly toasted.
  2. Add the ground beef to the saucepan. Cook, breaking it apart with a wooden spoon, until it is browned and cooked through. Drain any excess fat from the pan.
  3. Stir in the drained corn, tomato sauce, ketchup, and water. Add the garlic powder, ground cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients.
  4. Reduce the heat to low, cover the saucepan, and let the mixture simmer for about 20 minutes. Stir occasionally to prevent sticking, and cook until the rice is tender and has absorbed most of the liquid.
  5. Taste and adjust seasoning with additional salt and pepper if needed. For an extra burst of freshness, garnish with minced cilantro before serving.
