Serving Size: 6

Cooking Time: 50 minutes

Ingredients

  • 4 Large Yukon Gold potatoes, divided
  • 6 Tablespoons (tbsp) butter, divided
  • 1 Clove garlic, minced
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste
  • 1 Tablespoon (tbsp) olive oil
  • 1 Pound (lb) lean beef, ground
  • 1 Tablespoon (tbsp) herbes de Provence
  • 1 Teaspoon (tsp) nutmeg, ground
  • 1.5 Cups peas, frozen
  • 0.5 Cups beef stock (optional)

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch deep-dish pie plate.
  2. Place the quartered potatoes in a pot and cover with salted water. Bring to a boil over high heat, then reduce the heat to medium-low. Cover and simmer until the potatoes are tender, about 20 minutes. Drain the potatoes and mash them with 2 tablespoons of butter and the minced garlic. Season with salt and pepper to taste, and set aside.
  3. While the potatoes are cooking, heat the olive oil in a skillet over medium heat. Add the ground beef, herbes de Provence, and nutmeg. Cook and stir until the beef is lightly browned and crumbly, about 10 minutes. If you prefer a saucier texture, stir in the beef stock at this point.
  4. Spread the cooked beef evenly in the prepared pie plate. Cover the beef layer evenly with the frozen peas. Spread the mashed potatoes over the peas, smoothing the top with a spatula. Dot the top of the pie with the remaining butter.
  5. Bake the pie, uncovered, in the preheated oven until the top is golden brown and the pie is heated through, about 20 minutes.
  6. Allow the pie to cool slightly before serving. Enjoy the comforting flavors of this herb-infused cottage pie with your family.
