Ingredients
- 2 Cups (c) olive oil
- 1 Cup (c) white vinegar
- 5 Cloves garlic, minced
- 2 Tablespoons (tbsp) lemon juice
- 1 Tablespoon (tbsp) garlic salt
- 3 Tablespoons (tbsp) crushed dried mint
- 2 Teaspoons (tsp) salt
- 2 Tablespoons (tbsp) dried basil
- 2 Teaspoons (tsp) dried oregano
- 1 Teaspoon (tsp) fresh-ground black pepper
- 4 Pounds (lb) chicken, cubed
- Wooden skewers, soaked
Steps
- Gather all ingredients.
- In a bowl, whisk together olive oil, vinegar, minced garlic, lemon juice, garlic salt, mint, salt, basil, oregano, and black pepper. Pour the mixture into a resealable plastic bag.
- Add the cubed chicken to the bag, ensuring it is well-coated with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for 24 hours, shaking the bag every 6 to 8 hours to redistribute the chicken.
- Preheat an outdoor grill to medium-high heat and lightly oil the grate. Remove the chicken from the marinade, shake off excess, and thread onto the soaked wooden skewers. Discard the remaining marinade.
- Grill the skewers, turning every 3 minutes, until the chicken is no longer pink in the center and the juices run clear, about 15 minutes. Ensure an internal temperature of at least 165°F (74°C) using an instant-read thermometer.
- Serve hot and enjoy!
