Serving Size: 4
Cooking Time: 40 minutes
Ingredients
- 1 Tablespoon (tbsp) olive oil
- 4 Skinless, boneless chicken breast halves, cubed
- 4 Cloves garlic, minced
- 0.5 Cups red wine
- 28 Ounces (oz) can Italian-style diced tomatoes
- 8 Ounces (oz) small seashell pasta
- 5 Ounces (oz) fresh spinach, torn
- 1 Cup shredded mozzarella cheese
- 1 Small yellow onion, minced
- 1 Teaspoon (tsp) dried Italian seasoning
- 0.5 Teaspoon (tsp) kosher salt
- 1 Pinch freshly ground black pepper, to taste
- 0.25 Teaspoon (tsp) red pepper flakes
Steps
- Heat the olive oil in a large skillet with a lid over medium heat. Add the cubed chicken and season with salt, black pepper, and Italian seasoning. Cook, stirring occasionally, until the chicken is browned and no longer pink in the center, about 5 to 8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and minced onion. Sauté until the onion is translucent and the garlic is fragrant, about 2 minutes.
- Pour in the red wine, scraping up any browned bits from the bottom of the pan with a wooden spoon. Allow the wine to reduce slightly, about 2 minutes.
- Add the diced tomatoes with their juice to the skillet. Bring the mixture to a boil over high heat.
- Stir in the seashell pasta, ensuring it is submerged in the sauce. Return to a boil, then reduce the heat to medium-low. Cook uncovered, stirring occasionally, until the pasta is al dente, about 10 minutes.
- Spread the torn spinach over the top of the pasta. Cover the skillet and let the spinach wilt, about 3 to 5 minutes.
- Return the cooked chicken to the skillet, stirring to combine with the pasta and spinach. Sprinkle the shredded mozzarella cheese evenly over the top.
- Cover the skillet and let it simmer until the cheese has melted and the dish is bubbling, about 5 minutes. If desired, sprinkle with red pepper flakes for added heat.
- Serve hot, garnished with additional Italian seasoning or fresh basil if desired. Enjoy your savory Italian chicken skillet!
