Ingredients

  • 2 10.5 Ounces (oz) cans chickpeas, drained
  • 2 Tablespoons (tbsp) red onion, minced
  • 2 Whole garlic cloves, minced
  • 1 Whole tomato, minced
  • 0.5 Cups parsley, minced
  • 3 Tablespoons (tbsp) olive oil
  • 1 Tablespoon (tbsp) lemon juice
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large bowl, combine the drained chickpeas, minced red onion, minced garlic, minced tomato, and minced parsley.
  2. Drizzle the olive oil and lemon juice over the mixture.
  3. Season with 1 pinch of salt and 1 pinch of pepper to taste, and toss everything together until well combined.
  4. For best results, refrigerate the salad for about 2 hours to allow the flavors to meld.
