- 2 Cups orzo pasta
- 1 Whole zucchini, shredded
- 1 Whole carrot, shredded
- 16 Ounces (oz) can stewed tomatoes, packaged
- 14 Ounces (oz) can vegetable broth
- 1 Teaspoon (tsp) Italian seasoning
- 1 Teaspoon (tsp) dried basil leaves
- 1 Pinch salt, to taste
- 1 Pinch black pepper, to taste
- 0.25 Cups green onions, sliced
- 0.25 Cups fresh parsley, torn
- 2 Teaspoons (tsp) lime zest, grated
- 2 Tablespoons (tbsp) lime juice
- 0.5 Cups Parmesan cheese, grated
Steps
- Heat the olive oil in a large skillet over medium-high heat.
- Stir in the minced garlic and orzo pasta; cook and stir until the pasta turns a light, golden color, about 5 minutes.
- Add the shredded zucchini and carrots; cook until the vegetables soften, about 2 minutes.
- Stir in the stewed tomatoes, vegetable broth, Italian seasoning, and basil. Season with salt and black pepper to taste.
- Reduce heat to medium. Cover, and simmer until almost all liquid is absorbed, about 10 minutes.
- Stir in the sliced green onions, torn parsley, grated lime zest, and lime juice.
- Remove from heat, cool slightly, and serve sprinkled with grated Parmesan cheese.
