Ingredients

  • 1 Whole spaghetti squash, halved
  • 2 Tablespoons (tbsp) vegetable oil
  • 1 Medium onion, minced
  • 1 Clove garlic, minced
  • 1.5 Cups tomatoes, chopped
  • 0.75 Cups feta cheese, crumbled
  • 3 Tablespoons (tbsp) black olives, sliced
  • 2 Tablespoons (tbsp) fresh basil, sliced

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a baking sheet.
  2. Place the spaghetti squash cut-sides down on the prepared baking sheet. Bake in the preheated oven for about 30 minutes, or until a sharp knife can be inserted with only a little resistance. Remove from the oven and set aside to cool slightly.
  3. While the squash is baking, heat the vegetable oil in a skillet over medium heat. Add the minced onion and cook until tender. Stir in the minced garlic and cook for an additional 2 to 3 minutes until fragrant.
  4. Add the chopped tomatoes to the skillet and cook until they are warmed through.
  5. Once the squash is cool enough to handle, use a large spoon to scoop out the stringy pulp and place it in a medium bowl.
  6. Toss the squash pulp with the cooked onion-tomato mixture, crumbled feta cheese, sliced black olives, and fresh basil.
  7. Serve warm and enjoy the blend of flavors and textures.

Best Spaghetti Squash Recipe Ever!

This Mediterranean Spaghetti Squash Bake is hands down the best spaghetti squash dish I’ve ever had! The flavors come together perfectly, and it’s such a delicious and healthy alternative to pasta.

I changed it up a bit by adding mozzarella balls, extra ground pesto, balsamic dressing, and chicken—and WOW, it took this dish to the next level! The mozzarella melted beautifully, the balsamic added a little tangy sweetness, and the chicken made it even more satisfying.

Highly recommend trying this recipe as-is or customizing it with your favorite ingredients. Definitely going into my regular meal rotation! 😍🍽️
