- 1 Whole ripe tomato, diced

- 2 Tablespoons fresh cilantro, torn
- 2 Tablespoons fresh lime juice

- 1 Teaspoon (tsp) cumin, ground
- 1 Teaspoon (tsp) chili powder
- 1 Pinch black pepper, to taste
- 2 Tablespoons (tbsp) olive oil
- 8 4 Ounces (oz) boneless pork loin chops
Steps
- Preheat an outdoor grill to medium-high heat. Lightly oil the grill grate and set it 4 inches from the heat source.
- In a bowl, combine nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes. Toss to blend and season with salt. Cover and refrigerate for 30 minutes to allow flavors to meld.
