Ingredients

  • 1.5 Pounds (lb) carrots, divided
  • 2 Pounds (lb) parsnips, peeled
  • 0.5 Cups (cup) butter, diced
  • 1 Pinch nutmeg, ground
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, ground

Steps

  1. Bring a large pot of salted water to a boil. Add the carrots, cover partially, and simmer for 5 minutes.
  2. Add the parsnips to the pot, cover partially, and continue to simmer until the vegetables are very tender, about 15 minutes. Drain well.
  3. Return the drained vegetables to the saucepan and stir over medium heat until any excess moisture evaporates.
  4. Transfer the vegetables to a food processor. Add the diced butter and process until smooth.
  5. Season the mash with ground nutmeg, salt, and black pepper to taste.
  6. The mash can be made up to 4 hours ahead. If preparing in advance, warm over low heat, stirring often before serving.
  7. Transfer the mash to a serving bowl and enjoy!
