Ingredients

  • 2.25 Cups water
  • 1 Cup milk
  • 1 Tablespoon (tbsp) unsalted butter
  • 1 Cup quick-cooking polenta
  • 1.5 Cups Parmesan cheese, grated
  • 4 Fresh basil leaves, minced
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 1 Tablespoon (tbsp) unsalted butter, divided
  • 2 Whole tomatoes, sliced

Steps

  1. Preheat the oven to 450°F (230°C). Grease an 8x8-inch baking dish.
  2. In a saucepan over medium-high heat, combine water, milk, and 1 tablespoon of butter; bring to a boil.
  3. Stir in the polenta with a wooden spoon until thickened, about 5 minutes. Remove from heat.
  4. Mix in 1 cup of Parmesan cheese and 2 of the minced basil leaves. Season with salt and ground black pepper.
  5. Transfer the polenta mixture to the prepared baking dish. Arrange divided butter pieces over the top.
  6. Bake in the preheated oven until bubbly and beginning to brown, about 15 to 20 minutes.

  8. Sprinkle the remaining 2 minced basil leaves and 0.5 cups of grated Parmesan cheese over the tomatoes.
  9. Return to the oven and bake until the tomatoes are warm and the Parmesan is bubbly, about 5 to 10 minutes.
  10. Serve hot as a side dish or a light main course. Enjoy!
