- 2.25 Cups water
- 1 Cup milk
- 1 Tablespoon (tbsp) unsalted butter
- 1 Cup quick-cooking polenta
- 1.5 Cups Parmesan cheese, grated
- 4 Fresh basil leaves, minced
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 1 Tablespoon (tbsp) unsalted butter, divided
- 2 Whole tomatoes, sliced
Steps
- Preheat the oven to 450°F (230°C). Grease an 8x8-inch baking dish.
- In a saucepan over medium-high heat, combine water, milk, and 1 tablespoon of butter; bring to a boil.
- Stir in the polenta with a wooden spoon until thickened, about 5 minutes. Remove from heat.
- Mix in 1 cup of Parmesan cheese and 2 of the minced basil leaves. Season with salt and ground black pepper.
- Transfer the polenta mixture to the prepared baking dish. Arrange divided butter pieces over the top.
- Bake in the preheated oven until bubbly and beginning to brown, about 15 to 20 minutes.
- Remove from the oven and arrange tomato slices decoratively over the top of the polenta.
- Sprinkle the remaining 2 minced basil leaves and 0.5 cups of grated Parmesan cheese over the tomatoes.
- Return to the oven and bake until the tomatoes are warm and the Parmesan is bubbly, about 5 to 10 minutes.
