- 1 15.5 Ounces (oz) package yellow cake mix, divided
- 3 Large eggs
- 0.5 Cups (c) vegetable oil
- 1 Cups (c) brown sugar, packed
- 0.5 Cups (c) unsalted butter, cubed
- 0.25 Cups (c) heavy cream
- 1 Teaspoon (tsp) vanilla extract
- 2 Cups (c) confectioners sugar

- Preheat the oven to 350°F (175°C). Spray a 13x9-inch pan with nonstick cooking spray.
- Drain juice from the cans of peaches into a measuring cup until you have 0.5 cups of peach juice. Set aside the 0.5 cups of peach juice and discard the remaining juice.
- Mince peaches and pat with paper towels to remove some of the excess moisture. Add minced peaches to a small mixing bowl and toss with 1 tablespoon of the cake mix.
- In a large mixing bowl, beat the remaining cake mix, eggs, oil, and 0.5 cups reserved peach juice with an electric mixer until well combined. Pour batter into the prepared pan. Sprinkle minced peaches evenly over the batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean (a few moist crumbs are okay), about 28 to 33 minutes. Allow the cake to begin cooling on a wire rack while you prepare the icing.
