- 1 Small sugar pumpkin, peeled
- 2 Whole onions, minced
- 2 Cups diced celery
- 0.25 Cup shortening
- 5 Pounds lean ground beef, ground
- 0.5 Teaspoon (tsp) black pepper, ground
- 20 Ounces (oz) ketchup
- 3 Cloves garlic, minced
- 5 Teaspoons (tsp) salt
- 3 Tablespoons (tbsp) Worcestershire sauce
- 30 Ounces (oz) tomato sauce
- 0.25 Cup soy sauce
- 4.5 Ounces (oz) mushrooms, drained
- 2 Tablespoons (tbsp) brown sugar
- 10.75 Ounces (oz) condensed cream of celery soup, packaged
- 2 Cups white rice, cooked
Steps
- Preheat your oven to 375°F (190°C). Cut off the top of the pumpkin and scrape out the seeds and pith.
- In a large deep skillet, sauté the onions and celery in 0.25 cups of shortening until soft.
- Add the ground beef to the skillet; cook and crumble until evenly browned.
- Stir in the ground black pepper, ketchup, minced garlic, salt, Worcestershire sauce, and tomato sauce. Simmer for 15-20 minutes.
- In a large mixing bowl, combine 2 cups of the beef mixture with soy sauce, mushrooms, brown sugar, cream of celery soup, and cooked rice. Mix well.
- Pour the mixture into the hollowed pumpkin and replace the pumpkin lid.
- Place the filled pumpkin on a baking sheet and bake for one hour or until the pumpkin is tender.
