Ingredients

  • 1 Cup all-purpose flour
  • 0.33 Cup brown sugar, packed
  • 5 Tablespoons (tbsp) butter, softened
  • 0.5 Cup pecans, finely chopped
  • 8 Ounces (oz) cream cheese
  • 0.75 Cup white sugar
  • 0.5 Cup pumpkin puree
  • 2 Whole eggs
  • 1 Teaspoon (tsp) vanilla extract
  • 1 Teaspoon (tsp) allspice, ground
  • 1.5 Teaspoons (tsp) cinnamon, ground

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
  2. In a bowl, mix the flour and brown sugar. Cut the softened butter into the flour mixture until small crumbs form. Stir in the chopped pecans. Set aside 3/4 cup of this mixture for topping the bars. Press the remaining mixture into the bottom of the prepared baking dish.
  3. Bake the crust in the preheated oven until lightly browned, about 15 minutes. Remove from the oven and set aside to cool slightly.
  4. In a separate bowl, beat together the cream cheese, white sugar, pumpkin puree, eggs, vanilla extract, allspice, and cinnamon until smooth. Pour this mixture over the cooled crust. Sprinkle the reserved topping over the cream cheese mixture.
  5. Return the dish to the oven and continue baking until the topping browns, about 30 to 35 minutes.
  6. Allow the bars to cool before cutting into 16 squares. Enjoy your delicious pumpkin cheesecake bars!
