Ingredients

  • 1 Whole (9 inch) unbaked pie crust pastry shell
  • 1 Cup white sugar
  • 1 Cup water
  • 3 Tablespoons (tbsp) cornstarch
  • 0.25 Cup raspberry-flavored gelatin mix
  • 2.5 Cups fresh raspberries
  • 1 Cup whipped cream

Steps

  1. Preheat the oven to 450 degrees F (230 degrees C). Line the pie crust pastry shell (unpricked) with two layers of heavy-duty aluminum foil.
  2. Bake in the preheated oven for 8 minutes. Remove the foil and bake for an additional 5 minutes. Cool on a wire rack.
  3. In a saucepan, combine sugar, water, and cornstarch. Cook over medium heat until the sugar and cornstarch dissolve and the mixture thickens, about 10 minutes. Remove from heat and whisk in the gelatin mix. Refrigerate the filling until slightly cooled, about 15 minutes.
  4. Arrange the raspberries evenly in the bottom of the pie crust. Pour the gelatin filling over the berries. Chill in the refrigerator until set, 4 to 6 hours.
  5. Garnish with whipped cream before serving. Enjoy your Sweet Raspberry Delight Pie!
