Ingredients

  • 1 Cup bulgur
  • 3 Whole tomatoes, diced
  • 2 Whole cucumbers, peeled
  • 3 Whole green onions, minced
  • 3 Cloves garlic, minced
  • 1 Cup fresh parsley, minced
  • 0.33 Cup fresh mint leaves
  • 2 Teaspoons (tsp) salt
  • 0.5 Cup lemon juice
  • 0.67 Cup olive oil

Steps

  1. Place the bulgur in a bowl and cover with 2 cups of boiling water. Let it soak for 30 minutes, then drain and squeeze out any excess water.
  2. In a large mixing bowl, combine the soaked bulgur, tomatoes, cucumbers, green onions, garlic, parsley, mint, salt, lemon juice, and olive oil.
  3. Toss the ingredients together until well mixed.
  4. Refrigerate the salad for at least 4 hours to allow the flavors to meld.
  5. Before serving, toss the salad again to ensure even distribution of the dressing. Enjoy your zesty lemon tabbouleh!
