Ingredients

  • 3 Tablespoons olive oil, divided
  • 1 Large onion, minced
  • 1 Tablespoon salt, to taste
  • 1 Cup dry red lentils, rinsed and drained
  • 6 Cups water
  • 1 Bunch collard greens, sliced
  • 2 Tablespoons garlic, minced
  • 1 Tablespoon cumin, ground
  • 1 Teaspoon cinnamon, ground
  • 0.33 Cup lemon juice

Steps

  1. Heat 1 tablespoon of olive oil in a large saucepan over medium heat. Add the minced onion and salt, cooking until the onion is softened and translucent, about 4 minutes.
  2. Stir in the red lentils and cook for 1 minute. Pour in the water, increase the heat to high, and bring to a boil. Reduce the heat to medium-low, cover, and simmer until the lentils are tender, about 15 minutes.
  3. While the lentils are cooking, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced collard greens and cook until wilted, about 10 minutes.
  4. Once the lentils are tender, stir in the cooked collard greens, minced garlic, ground cumin, and ground cinnamon. Simmer for an additional 10 minutes.
  5. Stir in the lemon juice just before serving. Enjoy your zesty lemon lentil soup!
