- 1 Large onion, minced
- 1 Teaspoon (tsp) garlic, minced
- 12 Ounces (oz) pork tenderloin, diced
- 19 Ounces (oz) black beans, drained
- 0.25 Cup water
- 3 Chorizo sausages, sliced
- 1.5 Cups chicken stock
- 2 Bay leaves
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste

- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the minced onion and minced garlic; cook until the onion softens and turns translucent, about 3 to 5 minutes. Transfer the onion mixture to a saucepan.
- Pour the remaining 1 tablespoon of vegetable oil into the skillet and place over medium-high heat. Add the diced pork tenderloin; cook until well browned.
- Meanwhile, add 3/4 of the black beans and 1/4 cup of water to a blender; pulse until pureed but not quite smooth.
- Transfer the bean purée to the saucepan; stir in the whole black beans, browned pork cubes, chorizo slices, chicken stock, and bay leaves.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Cover and simmer for 30 minutes.
- Season with salt and ground black pepper to taste before serving.
