- 1 Cup onion, minced

- 1 8 Ounce (oz) can tomato sauce
- 0.75 Cup strong brewed coffee
- 0.25 Cup water
- 1 Teaspoon (tsp) white sugar
- 1 Teaspoon (tsp) salt
- 1 Pinch black pepper, to taste
- 0.33 Cup heavy cream
Steps
- Melt the butter in a stock pot over medium heat. Add the onion, carrots, celery, garlic, and parsley. Cook and stir until the onion is translucent, about 5 minutes.
- Add the tomatoes, tomato sauce, coffee, water, sugar, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 20 to 25 minutes.
- Carefully pour the hot soup into a blender, filling the pitcher no more than halfway. Hold the lid with a folded kitchen towel and start the blender with a few quick pulses before pureeing until smooth. Repeat in batches if necessary.
