Ingredients
- 1 Pound (lb) beef, ground
- 1 Ounce (oz) package taco seasoning mix, packaged
- 12 5 Inch corn tortillas
- 1 Cup Monterey Jack cheese, shredded
- 0.5 Cup onion, minced
- 2 Cups iceberg lettuce, shredded
- 1 Large tomato, diced
- 1 8 Ounce (oz) jar salsa
- 1 8 Ounce (oz) container sour cream, packaged (Optional)
Steps
- Build a campfire and allow it to burn until a bed of coals has formed. Rake the coals into a flat bed on one side of the fire.
- In a large skillet over medium-high heat, cook the ground beef until browned, stirring to crumble. Drain excess fat and stir in taco seasoning according to package directions.
- Coat the inside of a pie iron with cooking spray. Place one corn tortilla on one side, add a scoop of ground beef, sprinkle with Monterey Jack cheese, and add minced onion. Place another corn tortilla on top and close the pie iron.
- Cook the taco over moderate campfire coals until the tortillas are crisp and browned, and the taco is hot in the center.
- Serve with shredded lettuce, diced tomato, salsa, and sour cream. Repeat with remaining ingredients.
