Serving Size: 4
Cooking Time: 90 minutes
Ingredients
- 1 Medium lime, juiced
- 1 Tablespoon (tbsp) garlic, minced
- 1 Teaspoon (tsp) oregano, dried
- 1 Teaspoon (tsp) cumin, ground
- 2 Tablespoons (tbsp) chipotle peppers in adobo sauce, minced
- 2 Tablespoons (tbsp) adobo sauce
- 4 8 Ounces (oz) beef sirloin steaks
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- In a small bowl, whisk together the lime juice, minced garlic, dried oregano, and ground cumin. Stir in the minced chipotle peppers and adobo sauce until well combined.
- Using a sharp knife, pierce the sirloin steaks on both sides to allow the marinade to penetrate. Season the steaks generously with salt and pepper.
- Place the steaks in a glass baking dish and pour the adobo marinade over them. Turn the steaks to ensure they are well coated. Cover the dish with plastic wrap and refrigerate for 1 to 2 hours to marinate.
- Preheat an outdoor grill to high heat. Lightly oil the grill grate to prevent sticking.
- Remove the steaks from the marinade, allowing any excess to drip off. Discard the remaining marinade.
- Grill the steaks on the preheated grill for about 6 minutes per side, or until they reach your desired level of doneness. For medium, an instant-read thermometer should read 140 degrees F (60 degrees C) when inserted into the center of the steak.
- Once cooked, let the steaks rest for 5 minutes before serving to allow the juices to redistribute. Enjoy your Spicy Chipotle Adobo Sirloin with your favorite sides or as a filling for tacos or fajitas.
