- 0.33 Cups (cup) ghee
- 1 Bulb garlic, minced
- 0.5 Teaspoons (tsp) cumin seed, toasted
- 6 Ounces (oz) tomato paste
- 3 Inches piece ginger, minced
- 2 Teaspoons (tsp) garam masala, divided
- 1 Teaspoon (tsp) salt
- 1 Large onion, minced
- 1 Cup (cup) water
- 10 Ounces (oz) spinach, thawed and drained
- 1 Pound (lb) paneer
- 0.25 Cup (cup) cilantro, chopped
Steps
- Melt the ghee in a saucepan over medium-low heat. Stir in the minced garlic and toasted cumin seed; cook until the garlic softens, about 3 minutes.
- Add the tomato paste, minced ginger, 1 teaspoon of garam masala, salt, minced onion, and water. Increase the heat to medium and stir until the tomato paste dissolves. Simmer slowly for 1 hour, adding water as needed to maintain a sauce-like consistency.
- Stir in the thawed and drained spinach and cook until hot, about 5 minutes.
- Add the paneer cubes and allow to cook for an additional 5 minutes, or until hot.
- Pour the mixture into a serving dish and sprinkle with chopped cilantro and the remaining 1 teaspoon of garam masala.
